ORIENTAL CHICKEN SALAD 
DRESSING:

1/4 c. vegetable oil
3 tbsp. soy sauce
3 tbsp. lemon juice
3 tbsp. rice vinegar
1 tbsp. brown sugar
1 tbsp. dry sherry
1-2 cloves garlic, minced
1/4 tsp. minced fresh ginger root
1/4 tsp. sesame oil

Mix above ingredients for dressing. Heat and let cool completely.

Spinach salad (lettuce)
Boneless breast of chicken
Snow peas (pea pods)
Sliced water chestnuts
Scallions (spring onions)
Chow mein noodles (crunchy)

Bake boneless chicken breast and cut up into small strips. Steam snow peas, do not over cook. Combine spinach salad, chicken, snow peas, water chestnuts, scallions. Mix with above dressing. Put crunchy noodles on top of salad.
