CHOOSE-A-BEAN-SOUP 
1/4 c. dried garbanzo beans
1/4 c. dried navy or lima beans
1/4 c. dried kidney or pinto beans
1/4 c. dried whole or split peas
3 tbsp. minced dried onion
2 tbsp. whole wheat berries
2 tbsp. pearl barley
2 tbsp. dried celery flakes
2 tsp. instant beef bouillon
1/2 tsp. dried basil, crushed
1 bay leaf
Salt

Combine all ingredients in a zip lock bag or airtight container; store, tightly sealed until needed.

TO COOK:

1 recipe Choose-A-Bean-Soup Mix
7 c. water

Bring to a boil, reduce heat. Cover; simmer 2 minutes. Remove from heat, cover; let stand 1 hour. Bring back up to a boil, reduce heat, cover, simmer 1 1/2 to 2 hours until beans are tender. Remove bay leaf. Season to taste with salt. You could also add ham to flavor. Serve with biscuits or corn bread.
