EASY TUSCAN BEAN SOUP | |
1 (16 oz.) pkg. turkey Italian sausages, hot or mild, as desired 1 (15 oz.) can cannelloni or great northern beans, drained and rinsed 1/2 (15 oz.) can garbanzo beans, drained and rinsed 1 (15 oz.) can lentil soup, drained and liquid reserved 1 (15 oz.) can diced tomatoes 1/2 cup water 1 1/2 tsp. salt 1/2 tsp. pepper Brown turkey sausage in skillet. In separate pot, add next 7 ingredients and cook over medium-high heat. Take 1/2 cup of bean mixture and add to blender to liquefy. Add back into pot to thicken soup, then add sausage. Add reserved lentil liquid to achieve desired soupiness. Serve with crusty Italian bread. Submitted by: Kschin |
