ZUCCHINI BREAD 
3 c. flour
1 1/2 c. sugar
1 tsp. salt
1 tsp. baking powder
3/4 tsp. baking soda
2 c. shredded unpeeled zucchini
1 c. chopped nuts
1 c. raisins
3 eggs
1 c. oil

In a large bowl, stir together everything but the eggs and oil. Beat eggs and oil. Pour over mixture, stir until well moistened. Turn into greased and floured bread pan and bake at 350°F for about 1 1/2 hours.

Cool 10 minutes before removing from pan.
