QUICK AND EASY SKILLET CHOWDER | |
3 tbsp. roasted garlic butter (Land O' Lakes) 2 tbsp. oil 2 c. frozen potatoes O'Brien, thawed 1 (14 3/4 oz.) can cream style corn 1/4 c. cooked and crumbled bacon (or real bacon bits) 2 c. half & half 1/8 tsp. white pepper 1/4 tsp. paprika 1/2 tsp. salt 2 tbsp. chopped fresh chives (or 1 tbsp. dried) Cheese of choice, optional Heat garlic butter and oil in large skillet. I like to use my electric skillet for this. Add the potatoes and cook over medium heat, stirring constantly, until tender. This usually takes about 4 to 5 minutes. Add corn, bacon, half & half, white pepper, paprika, salt and chives. Continue cooking over low heat for about 5 minutes or until mixture is slightly thickened. If desired, sprinkle a little cheese over the top of each serving. |
