CHOCOLATE COVERED "RITZ" TREATS 
1 box Ritz crackers
1 sm. jar peanut butter
1 pkg. milk chocolate melting pieces

Put generous amount of peanut butter between 2 Ritz crackers. Melt chocolate over low heat (add a little paraffin to help it set up).

Using fork, dip crackers in melted chocolate, covering both sides. Place on wax paper until chocolate sets up and can be removed from paper easily.

I have been making these for years. Instead of the milk chocolate pieces. I have used almond bark bakers chocolate and the entire extended family request them every year. It is a big hit.

My ex-relative made cookies every year for the holidays and gave away tins of them as christmas presents to everyone, and these were one of the many cookies that were in the tins. These have always been my favorite and once I learned how to make them, and after she became an ex-relative, I now make them every xmas and they are considered holiday cookies.

I have made these with the miniature Ritz crackers that already have the peanut butter between them. It's even faster! Of course, they are more like chocolates than like cookies.

I didn't add the paraffin and the cookies were delicious !! They set up very well. Add red and green sprinkles for the Holidays. Pecan pieces or coconut are tasty additions.
