SHRIMP CANAPES 
1 (4 1/2 oz.) can shrimp, drained
1/3 c. mayonnaise
1/4 c. chopped onion
1/4 tsp. salt
Dash pepper
Dash paprika
6-8 slices American cheese
16 Club crackers
1/4 c. Parmesan cheese

Chop shrimp; add mayonnaise, onion and seasonings, mixing well. Cut strips of cheese to fit crackers. Place on crackers and top each with 1 tablespoon of mixture. Sprinkle with Parmesan. Broil 8 to 10 minutes at 350 degrees.
