SCANDINAVIAN BEET PICKLES 
24 med. beets
1 c. sugar
2 bay leaves
3 c. white vinegar
1 piece fresh horseradish

Cook beets until tender. Meanwhile, boil sugar, bay leaves, and vinegar. Peel warm beets; place in boiling vinegar. Add horseradish. Bring to boil again. Boil for 1 minute. Pack in sterilized jars and seal.
