BEET SOUP 
1 c. sliced, cooked beets
1/2 sm. onion, sliced
1 tsp. salt
1/4 tsp. freshly ground black pepper
2 tbsp. lemon juice
1 med. boiled potato or 2/3 c. mashed potato
1 c. chicken stock
1 c. sour cream
1 c. cracked ice

1. Put the beets, onion, salt, pepper, lemon juice and potato into blender and turn on high.

2. Remove the cover and with the motor running, pour in the chicken stock and sour cream.

3. Add cracked ice and blend for 1 minute.

4. Chill and serve garnished with chopped fresh dill.
