BEET SOUP 
1 ham bone
2 carrots
4 beets or 1 can sliced beets
1 onion, chopped
2 c. shredded cabbage
1/2 c. sour cream
Salt and pepper to taste

Bring ham bone to a boil in 3 quarts of water. Cover. Add all ingredients except sour cream. Reduce heat. Cook for 1 hour. Add sour cream. Simmer until tender.
