BEET SOUP 
2/3 c. low fat cottage cheese
1 tsp. onion flakes
1 tsp. lemon juice
1 can beets, diced or sliced with liquid
1 can chicken broth
1 dash white pepper

Place cottage cheese, onion flakes and lemon juice in blender and blend until consistency of sour cream. Add beets, chicken broth and white pepper. Blend. Serve cold. Low calorie recipe.
