MANDARIN SLICED BEETS 
1 (16 oz.) can sliced beets
1 tbsp. cornstarch
1/2 c. orange juice
2 tbsp. honey
1 tsp. freshly grated orange peel
1/4 tsp. ground dried ginger
Dash ground cinnamon
1 (11 oz.) can mandarin orange sections, drained

Drain beets, reserving 1/2 cup liquid. Set beets aside. Place cornstarch in 2 quart microwave-safe casserole. Blend in reserved beet liquid and orange juice.

Microwave on High for one minute. Add honey, orange peel and spices. Microwave 4 to 5 minutes, stirring every 2 minutes until mixture is hot and bubbly.

Add sliced beets, microwave 2 minutes then add orange sections. Microwave 1 to 2 minutes. Let stand covered 3 minutes before serving. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
