PICKLED ONION & BEET SLICES 
2 tbsp. sugar
1/4 c. vinegar
1/4 c. salad oil
Salt & pepper to taste
1 med. onion, thinly sliced
1 (16 oz.) can sliced beets, drained
Lettuce (optional)

Mix sugar, vinegar, salad oil, salt and pepper. Place sliced onion and beets in a bowl. Add vinegar mixture. Refrigerate for 8 to 12 hours or overnight. Serve on lettuce (optional).
