SPINACH - BEET SALAD 
1 (16 oz.) can sliced beets, drained
1/2 c. Italian salad dressing
1/4 lb. fresh spinach, cleaned and torn into bite size pieces
4 green onions, chopped
2 stalks celery, sliced
2 slices bacon, cooked and crumbled
2 hard cooked eggs
Additional fresh spinach leaves

Combine beets and dressing in a medium mixing bowl. Cover with plastic wrap and marinate overnight. Drain beet mixture. Add torn spinach, green onions, and celery to beet mixture. Toss gently. Arrange beet mixture on additional spinach leaves. Sprinkle bacon over top. Finely chop hard cooked eggs and sprinkle over top of salad before serving. Yield: 4 servings.
