1 lb. bacon OR 1 lb. pork sausage 1 c. celery, chopped 1 c. onion, chopped 2 (4 oz.) cans mushrooms 2 lg. apples, peeled and diced 2 lg. loaves bread, cubed 4 tbsp. poultry seasoning Dice bacon or crumble bulk sausage, and fry out in large frying pan. Add celery and onion, and fry until soft but not browned. Add mushrooms and apple and just heat through. Meanwhile cube bread into a large mixing bowl and add poultry seasoning, tossing to mix with the bread. Pour meat, drippings, and vegetables over bread and again toss to mix. If more moisture is needed, add chicken or turkey broth. Taste and correct seasonings with more poultry seasoning, salt, or pepper as needed. Stuffing can be cooked one of two ways; either in the bird or in a covered casserole, setting in a pan of water in the oven. Makes 12 servings. |
