PICKLED BEETS 
3 lbs. beets
1 stick cinnamon
1 tsp. whole allspice
6 whole cloves
2 c. vinegar
1/2 c. sugar
1/2 c. water

Cook beats in boiling water until tender and remove skins, roots, and tops. Ti spices in cheese cloth bag.

Heat vinegar, water, sugar and spices to boiling. Add beets, whole or sliced and boil 5 minutes.

Remove spice bag, pack beets in jars and fill jars with hot liquid. Seal.
