BEET PICKLES 
2 c. sugar
2 c. beet water
2 c. vinegar
1 tsp. cloves
1 tsp. allspice
1 tbsp. cinnamon

Boil beets until cooked. Let stand in the same water until cold. Slip the skins. Strain the water the beets were cooked in and use it in place of clear water. Add spices to the sugar before adding the water and vinegar. This keeps the spice from floating. Bring to a boil for 10 minutes. Add beets. Put into jars. The beet water will help to retain the color.
