HONEY CAKE 
1/2 c. soft butter
1 tsp. vanilla
2 whole eggs
2/3 c. honey
1/2 c. water
1 3/4 c. unsifted flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1 c. finely diced zucchini
1/2 c. chopped nuts or sunflower seeds

Combine butter, vanilla, eggs and honey. Beat with mixer. Beat in water. Add dry ingredients, mix well. Stir in zucchini and nuts. Bake at 350 degrees in greased and floured 9 x 13 inch pan for 25 to 30 minutes. Good with sweetened cream cheese or topped with fruit.
