SHRIMP AND SCALLOP GRATIN 
1 lb. shrimp, shelled and deveined
1 lb. bay scallops
2 tbsp. sherry
1/2 c. fresh parsley, minced
2 cloves garlic, minced
1 tbsp. scallion, chopped
1/4 tsp. oregano
3/4 c. fresh French bread crumbs, lightly toasted
1/2 tsp. salt
Pinch of cayenne
1 stick butter, unsalted

Combine shrimp and scallops and divide evenly among 4 well-buttered 5 inch gratin dishes. Sprinkle each dish with sherry. Combine minced parsley, garlic, scallion, and oregano.

Stir in the toasted bread crumbs, salt, cayenne, and pepper to taste. Sprinkle the mixture over the seafood and drizzle with the melted butter. Bake in preheated 400 degree oven for 10-12 minutes, or until tops are browned.
