FRANS MAYONNAISE 
1 egg or 2 yolks
3 tbsp. lemon juice
1 tsp. salt
1 tsp. sugar
1 tsp. dry mustard
2 c. Wesson oil, chilled

Beat egg yolks with 1 tablespoon lemon juice. Add salt, sugar, mustard, and paprika. Add Wesson oil very slowly, beating constantly. Then thick, add remaining juice. Beat until very thick. Makes 2 1/4 cups.
