MAYONNAISE 
1 egg yolk
2 tbsp. vinegar
2/3 c. pure olive oil
1/2 tsp. mustard
1/2 tsp. salt
dash of pepper and paprika

Mix the dry ingredients; add egg yolk and mix well. Add vinegar and oil gradually, beating constantly with an eggbeater until mixture thickens.

Variations for Salads:

Celery Dressing: Add 1/4 cup finely chopped celery and 2 tablespoons chopped green pepper to mayonnaise.

Fruit Salad Dressing: Add or fold in lightly 1/2 cup whipped cream.

Horseradish Dressing: Add 2 tablespoons horseradish to mayonnaise dressing.

Tartar Dressing: Add 3 tablespoons chopped pickles, 1 tablespoon chopped parsley and 2 tablespoons stuffed olives, chopped.

Thousand Island Dressing: To mayonnaise recipe add 1/4 cup chili sauce, 1 tablespoon chopped pickles, 1 tablespoon chopped green pepper and 1 tablespoon stuffed olives, chopped.

Hawaiian Dressing: Add to mayonnaise recipe 3 tablespoons orange juice and 4 tablespoons pineapple juice.

Piquante Dressing: Add to mayonnaise recipe 1/2 teaspoon mustard, 1/8 teaspoon Worcestershire sauce, 1/2 teaspoon onion juice and few drops Tabasco sauce.

Roquefort Cheese Dressing: Add 4 tablespoons Roquefort cheese crumbled up and a little vinegar to mayonnaise recipe.
