MAYO-NOT 
Mayonnaise it is NOT! But it is a wonderful dairy-free, cholesterol-free, low-calories substitute that works well in recipes calling for mayonnaise. It is NOT good as a substitute spread on bread because the oil content is so low, but it is a good dairy-free base for sauces calling for sour cream or cottage cheese and it is of great value to people on nondairy diets.

1/2 lb. tofu, cubed (1 c.)
1 tbsp. canola or corn oil
1 tbsp. freshly squeezed lemon juice
1/2 tsp. salt

Place ingredients in blender and blend until smooth. Refrigerate in tightly covered container. It will keep 1 week. Makes 1 cup.

1/4 cup contains approximately 75 total calories, 54 calories in fat, 0 milligrams cholesterol, 300 milligrams sodium, 60 milligrams calcium.

VARIATIONS:

HORSERADISH SAUCE: Add 2 teaspoons prepared horseradish, 1 1/2 teaspoons Worcestershire sauce, 1/2 teaspoon garlic powder and dash of Tabasco.

VANILLA-CINNAMON SAUCE: Add 4 teaspoons fructose or 2 tablespoons sugar, 1 1/2 teaspoons vanilla extract and 1/2 teaspoon ground cinnamon.
