QUICK GAZPACHO 
1 green pepper, cut in quarters
4 tomatoes, cut in quarters
1/2 sm. cucumber, cut in half
1 sm. onion, cut in half
6 garlic cloves, cut in half
1 c. olive oil
1/4 c. vinegar
3 hard rolls or 4 pieces stale bread, soaked in water
Salt to taste

Puree first five ingredients in blender or food processor. Add oil and vinegar and continue to blend.

Break off small pieces of rolls or bread, squeeze out a little water and add to blender. Continue blending until all bread is used up. Add salt.

Strain. If soup tastes too strong, add cold water. Chill and serve with garnishes (1 small onion, diced fine, 1/2 small cucumber, diced fine, 1 green pepper, diced fine).
