WELSH COOKIES 
7 c. flour
2 c. sugar
1 tsp. salt
1/2 tsp. baking powder
1 tsp. cream of tartar
1 tsp. nutmeg
1 3/4 c. lard
1/4 c. butter
1 box sm. currants
3 eggs
1/2 c. milk

Sift together the dry ingredients. Mix in the lard and butter until small particles form. Add 1 box of currants. Add the eggs and milk. Mix well. Roll out the dough until 1/4" thick. Cut with biscuit cutter and fry cookies on a non-stick griddle until lightly browned on both sides. Sprinkle with sugar while hot.
