7 c. flour 2 c. sugar 3 tsp. baking powder 1 tsp. baking soda 2-3 tsp. nutmeg or cinnamon 1 tsp. salt 1 lb. lard 1 pkg. currants Boil some water, put the currants in a bowl and pour the boiling water over them and let them set. This softens them. Before using pour the water off, best way is to put them in a sieve and let them drain. Mix together dry ingredients and lard by hand or with pastry cutter. Then mix together with 1 cup of milk, 2 eggs and 1 1/2 teaspoons vanilla. Mix currants in. Use small amounts of dough and roll it out on a floured board, cut with round cutter or glass. Fry on an electric grill set at 400 degrees. Don't put anything on the grill. Preferably a teflon grill. Turn them over when they are slightly browned and then when the other side is browned take them off the grill and stack them, one on top of the other. This makes at least 100 cookies. |
