BANANA OAT STREUSEL MUFFINS 
1/4 c. all-purpose flour
1 tbsp. baking powder
1/8 tsp. salt
2 egg whites, slightly beaten
1/2 c. skim milk
1/3 c. brown sugar
3 tbsp. oil
1 1/2 c. oat cereal flakes (Posts are good)
1 c. banana, finely chopped

Mix first 3 ingredients in bowl. Combine egg whites, milk, sugar, and oil. Add to flour mixture. Stir until just moistened. Stir in cereal flakes and banana. Spoon into greased muffin cups. Sprinkle topping over and bake 25 to 30 minutes at 350 degrees. Let stand 5 minutes. Makes 12 muffins.

STREUSEL TOPPING:

1/2 c. oat cereal flakes
1 tbsp. brown sugar
1 tsp. oil
1/2 tsp. cinnamon

Mix together; stir until crumbly and sprinkle over muffins.

150 calories, 170 mg sodium, 4 g fat, and 0 cholesterol per muffin.
