BANANA PUDDING 
3 c. whole milk
3/4 c. sugar
3 level tbsp. Argo cornstarch
Pinch of salt
1/2 tsp. butter
2 eggs
1 tsp. vanilla
6 ripe bananas
Box of vanilla wafers
Cool Whip topping or other

Heat milk and butter on medium heat in heavy non stick kettle or double boiler. While milk is heating, stir together sugar, salt and cornstarch until well blended, then add eggs and stir until blended. Add this to milk when it is almost to a boil, stirring continuously until boiling and to desired thickness.

Remove from heat and add vanilla, cool slightly.

Line bottom and sides of 2 inch deep container (about 8 x 8) with wafers, cover with layer of thinly sliced bananas, then half of the pudding. Add another layer of each.

Add Cool Whip when ready to serve.

NOTE: This basic pudding mix can be used for chocolate pudding by adding 2 tablespoons of cocoa to dry ingredients.
