SLOVAK KOLACHE 
1 1/2 c. scalded milk
1/2 c. sugar
7 1/2 c. flour
1 tbsp. salt
2 eggs
3/4 c. butter, melted
2 pkgs. compressed yeast in 1/2 c. of tepid water

Stir or mix all these ingredients as for bread dough. Let rise; punch down and let rise again and then roll out into squares about (2 x 2 inch squares). Fillings are of various kinds. Cook a package of prunes, pit and mash. Add:

1/2 tsp. cinnamon
1/4 tsp. ginger
1/2 c. sugar
1/2 c. nuts, chopped

Chop nuts real fine. Combine and fill your squares of dough. Pinch opposite ends together securely so that filling doesn't come out. Let rise for 1 1/2 hours. Then glaze with a mixture of:

1 egg white, beaten
1/4 c. water

Beat egg white with 1/4 cup water and bake in 375 degree oven for 15 or 20 minutes until they are done. You can use various fillings in cans, like: poppy seed, prunes, apricots, cheese, dates, etc.

DRY COTTAGE CHEESE:

1 pt. cottage cheese
1 egg, beaten
2 tbsp. sugar
1/2 tsp. cinnamon or ginger

Shape in a dessert spoon and put into the squares of dough. Glaze with a mixture of 1 egg yolk, beaten slightly and 2 tablespoons of water.
