RICE PUDDING 
1 c. UNCLE BEN'S® rice
1/2 tsp. salt
1/2 c. sugar
8 c. milk (low fat acceptable)
1 egg
2 tsp. vanilla

In large saucepan boil 1 cup water and add rice and salt. Cover and cook for ten minutes on low heat. Add sugar. Slowly add 1 cup of milk at a time, letting milk be absorbed before adding additional milk. Stir frequently. Cook about 45 minutes until milk is absorbed and rice is tender. Beat egg with teaspoon of sugar.

Add a little of the rice mixture to egg stirring vigorously so egg doe snot curdle. Slowly pour egg mixture into rice mixture stirring well. Cool slightly, add 2 teaspoons of vanilla extract. Mix well. Cool and sprinkle with cinnamon. 10-12 servings.
