OVEN - FRIED SHARK 
2 lbs. fresh shark fillets
1/2 c. rich milk
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. basil
1 c. dry bread crumbs
1/3 c. melted butter
2 tsp. chopped parsley

Cut fillets into serving size portions. In a flat dish, combine milk, salt, pepper, and basil. Dip each fish portion into milk mixture, then into bread crumbs. Arrange fish in greased, shallow baking dish and pour melted butter over fish. Bake at 350 degrees for 20 minutes or until fish flakes easily when tested with a fork. Garnish with parsley. Makes 6 servings.
