SPINACH SALAD 
1 lb. fresh spinach
8 slices bacon

DRESSING:

3/4 tsp. salt
1 tsp. sugar
1/4 tsp. dry mustard
2 tbsp. sweet or sour cream
3 tbsp. wine vinegar
1 tsp. min. parsley
1/3 c. salad oil
4 hard boiled eggs, grated

Wash spinach well. Tear off steam and tear into pieces. Wrap in paper towels and stuff into plastic bag and put in refrigerator while preparing dressing. Fry 8 pieces bacon to a crisp and drain. For the dressing, mix all ingredients together. Then combine with bacon and spinach and toss well. Serves 4. Add croutons for an additional touch.
