STANDING RIB ROAST | |
1 (2 to 3 lb.) beef rib roast, small end (4 to 6 lbs.) Salt & pepper Place roast on rib bones in open roasting pan. Sprinkle salt and pepper. Insert meat thermometer into thickest part making sure its in center of roast. Roast in oven at 325 degrees until internal temperature reaches 140 degrees Fahrenheit for rare; 1 3/4 to 2 1/2 hours at 160 degrees Fahrenheit for medium; 2 1/4 to 3 1/2 hours for well. |
