DRESSING FOR FISH 
2 c. soft bread crumbs
1 tsp. grated onion
1/2 c. chopped celery
Lemon juice
3 tbsp. melted butter
2 tbsp. water
3/4 c. shredded carrots

Prepare above (use blender or processor to achieve fine texture). Mix well. Put between fish fillets. Oil bottom of pan; bake at 400-425 degrees 10 minutes/pound. Optional: top with bacon strips.
