POLYNESIAN CAKE | |
1 c. oil 2 c. sugar 3 eggs 2 c. flour 2 tsp. baking soda 2 tsp. cinnamon 2 tsp. salt 1/2 tsp. nutmeg 1 c. chopped walnuts 2 jars junior baby carrots 1 sm. can crushed pineapple 1 (5 oz.) pkg. flaked coconut Combine all ingredients in a large mixing bowl. Mix with wooden spoon. Do not use an electric mixer. Make sure ingredients are mixed well (about 150 strokes by hand). Pour into floured and greased 9 x 13 inch pan. Bake 50 minutes at 350 degrees. Frost with cream cheese frosting after cooled. |
