LIL'S CARROT CAKE 
4 jumbo eggs, well beaten
2 c. sugar
3/4 c. oil
2 junior size jars strained carrots
2 c. flour
2 tbsp. baking soda
2 tsp. cinnamon
1 tsp. salt

Mix all ingredients together in large bowl. Beat on high speed for 4 minutes. Bake in greased 9 x 13 x 2 inch baking pan, 40-45 minutes at 350 degrees. Frost with your favorite cream cheese frosting.
