EASY CARROT CAKE 
1 3/4 c. sugar
1 1/4 c. Wesson oil
4 eggs
1 tsp. baking powder
2 tsp. baking soda
2 tsp. salt
2 tsp. cinnamon
2 jars junior carrot baby food
1/2 c. pecans

Cream sugar and oil. Add eggs. Stir in flour, baking powder, soda, salt, and cinnamon. Fold in carrots and chopped nuts. Bake 1 hour at 350 degrees (sheet cake 20 minutes to 30 minutes at 325 degrees).

ICING:

1 stick butter
3 c. powdered sugar or more
8 oz. pkg. Philadelphia cream cheese
1 tsp. vanilla

Makes enough frosting for 2 cakes.
