EASY CARROT CAKE | |
4 eggs 1 1/2 c. cooking oil 2 c. sugar 2 tsp. cinnamon 2 1/2 c. flour 2 tsp. baking soda 1/2 c. walnuts 1 to 1 1/2 c. pureed carrots (2 jars - Junior food carrots) Put everything but the nuts in a mixing bowl. Stir until well mixed. Add the nuts and stir enough to distribute. Bake 1 hour or until tester comes out clean. Bake at 350 degrees in a 9 x 13 pan. I use a jelly roll pan and one small pan for bars, or 1/2 recipe is enough for bars in a 9 x 13 pan. Top with a cream cheese frosting. |
