EGGPLANT CASSEROLE 
2 or 3 egg plants
1/2 stick butter
1/4 c. green peppers, chopped
1 med. onion, chopped
1 1/2 lbs. ground beef
1 pkg. taco seasoning (McCormick)
1 c. Italian bread crumbs
2 c. grated sharp Cheddar cheese
2 tbsp. sugar
Cracker crumbs

Cook eggplants in salted water with some sugar added. Mash when done. Saute melted butter, green peppers, and onions. Add ground meat and cook until brown. Add taco seasoning, bread crumbs, grated cheese, and sugar. Mix together well. Place in large casserole and top with cracker crumbs. Bake 1 hour at 350 degrees. Cover for first 30 minutes.
