FRIED CATFISH 
Catfish (steaks or whole)
2 c. yellow cornmeal
1 tsp. salt
1/2 tsp. pepper
1 or 2 tbsp. paprika
1/8 tsp. cayenne pepper

Mix cornmeal, salt, black pepper, paprika and cayenne pepper. Coat catfish well and fry in hot oil until browned. The fish will float to top when done.
