4 lbs. catfish fillets
1 1/2 c. yellow cornmeal
2 tsp. salt
Vegetable oil

Dry fish thoroughly. Combine cornmeal and salt; coat fish with mixture. Fry fillets in deep hot oil (375 degrees) about 3 minutes or until they float to the top. Drain.
