ZIPPY FRIED CATFISH 
1 mess catfish, cleaned and dressed
2 tsp. mustard
4 tbsp. canned cream
Salt
Pepper
Cayenne pepper
White cornmeal

For about 1 to 3 hours, soak your catfish in mustard and canned cream, plus salt and pepper to taste. Sprinkle with cayenne pepper and roll in white cornmeal and fry to light golden brown in 1 inch of grease in a hot skillet. Catfish fry fast, so don't overcook. If you serve it with anything but hushpuppies, grits, cole slaw or home fries, it'll get up and walk off the plate.
