FRIED CATFISH 
2 lbs. catfish
1 tsp. salt
1/2 tsp. pepper
1 c. corn meal
1 egg, beaten
1 tbsp. water
1 c. oil
Lemon wedges

Skin catfish and filet. Cut into portions. Season with salt and pepper. Dip into corn meal. Beat eggs and water together. Dip mealed fish into egg mixture and back into corn meal. Saute' in hot fat for about 12 minutes until golden brown, turning once. Garnish with lemon wedges.
