FRIED CATFISH 
2 lbs. catfish
1 tsp. salt
1/8 tsp. pepper
1/2 c. cornmeal
1 egg, well beaten mixed with 1 tbsp. water
1/4 c. fat, preferably bacon grease

Skin catfish and fillet by removing back bone. Cut into portions. Season with salt and pepper. Dip into cornmeal, into beaten egg, into cornmeal again. Fry in hot fat about 12 minutes, until golden brown, turning once. Makes 4 servings.
