Put yellow cornmeal through a food processor and make into a flour like coating. Salt and pepper. Marinate catfish in regular prepared mustard (such as French's brand). Yes, mustard. Can be marinated up to 6 hours in refrigerator. DO NOT RINSE OFF. Roll in flour like cornmeal mixed with salt and pepper. Pan fry. You will not taste the mustard, this is a real cajun dish. |
