Absolutely delicious. Use unsweetened fruit for this. Pour over heavy cream and you can also serve it for dessert. 1 can pineapple slices 1 can peach halves 1 can apricots 1 can pear halves 1/2 c. apricot juice 4 tbsp. butter, melted 1/2 c. brown sugar 1/2 c. coarsely chopped walnuts Preheat oven to 350 degrees. Drain fruit well, reserve apricot juice. Arrange dry fruit in baking dish. Cover with mixture of apricot juice (1/2 cup), melted butter and brown sugar. Sprinkle on walnuts; bake for 30 minutes until bubbly. Serve hot. Variation: Use any of your favorite fruits esp. colorful ones. I sometimes use spiced apple rings or dark cherries. Also instead of apricot juice, spread applesauce over fruit. Sprinkle with brown sugar, cinnamon and butter. |
