M.'S PECAN ROLLS 
1 cake yeast
1 c. lukewarm milk
1/4 c. sugar
1 tsp. salt
2 eggs, beaten
3 1/2 c. flour
1/4 c. melted shortening
Lemon flavoring
2 tbsp. butter
1/2 c. brown sugar
1/4 c. dark corn syrup

Crumble yeast into mixing bowl. Stir in lukewarm water, sugar, and salt. Let stand until yeast is dissolved. Stir in well beaten eggs. Add half of flour. Beat until mixture drops from spoon in sheets. Stir in melted shortening. Stir in remaining flour, adding just enough flour to make a soft dough. Knead until smooth and elastic. Place in greased bowl and allow to rise until double. Roll into rectangle 1/4 inch thick. Brush with butter, sprinkle with 1/4 cup sugar mixed with 1 teaspoon cinnamon. Slice into 1 inch slices.

Heat to dissolve sugar and sprinkle with 1/2 cup chopped pecan meats. Place mixture into pan and place the slices (rolled) of dough on top. Bake at 375 degrees for 25 minutes. When done, invert pan immediately onto tray.
