PUMPKIN BREAD 
3 1/2 c. sifted flour
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
3 c. sugar
1 c. oil
4 eggs
2/3 c. water
2 c. canned pumpkin or pureed squash (I use butternut)
1 c. chopped nuts, optional

Sift dry ingredients and sugar together in a large mixing bowl. Make a well. Add oil, eggs, water and pumpkin; mix well. Add nuts if desired. Put into 2 greased and floured loaf pans. Bake at 350 degrees for approximately 1 hour or until done.

Makes 2 loaves.
