RICE DELIGHT 
1 c. rice
1/2 c. sugar
1 c. crushed pineapple
1 tsp. vanilla
Dash of salt

Boil rice until soft with salt. Drain in colander. Pour on cold water while still in colander to separate kernels. Place in dish. Add sugar, pineapple and vanilla. Keep dish at room temperature until rice has absorbed juice from pineapple and then chill in the refrigerator. Serve with whipped cream.
