“FLUFFY EGGLESS PANCAKES” IS IN:

FLUFFY EGGLESS PANCAKES 
1 cup all-purpose flour
1 tsp. sugar
1 tsp. cinnamon
2 tsp. baking powder
1 cup whole milk
1 tbsp. vegetable oil
1 tbsp. water
1 tsp. vanilla extract
2 tbsp. butter

Combine dry ingredients and mix slightly. Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.

Heat a large skillet over medium-high heat until hot. While pan is heating, add butter. As soon as the butter is melted, add melted butter to pancake batter.

Return pan to stove and stir butter into batter.

When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.

Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.

Note: This recipe also works well with whole-wheat flour.

Variation: Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat!

Woke up with a cup of coffee and bacon, Hungry I wanted to make some pancakes, I quickly realized that I had NO eggs!!!! I simply looked up this recipe, I didn't really have high hopes for these newly discovered blessing. It was super delicious. Thank you Dawn :)

Kids lost our normal eggless recipe. This worked great. Suggest 1/2 cup extra milk if adding fruit to above recipe.

Ran out of eggs this morning and did not want to resort to cereal. With that being said I googled pancakes without eggs and found this recipe. I was quite surprised at how delicious these came out! Instead of whole milk I used almond, thanks for sharing this recipe!!!! :D will use again!

My son has a severe egg allergy. We''ve tried several eggless pancake recipes and mixes. This is by far the best and the only one he wants to eat. I make it with 2% milk and they are plenty creamy and fluffy.

I ran out of eggs and wanted pancakes, tried this recipe, didn't have any vanilla extract but I put strawberry jam in as an experiment, tasted amazing! Stuck to the pan a little but I cut them into heart shapes and sprinkled with icing sugar. Gorgeous!

Super fluffy and light. They rose beautifully, and looked like whole wheat pancakes (maybe on account of all the cinnamon?), but I think I did something wrong. Despite putting 3 tbsp. of sugar in, as well as chocolate chips and a pinch of salt, they tasted like straight up flour to me. Nothing some syrup couldn't fix, though, and this is going to be my go-to recipe, once I work out some personal kinks. No other recipe I've tried with eggs turned out so thick and fluffy.

I agree with the others about the cinnamon. My son is allergic to eggs so I was looking for an egg less alternative. They're okay, but the cinnamon was overpowering. My 11 year old ate 3 pancakes. The 2 year old (who is allergic to eggs) ate only one bite.
