“FLUFFY EGGLESS PANCAKES” IS IN:

FLUFFY EGGLESS PANCAKES
1 cup all-purpose flour
1 tsp. sugar
1 tsp. cinnamon
2 tsp. baking powder
1 cup whole milk
1 tbsp. vegetable oil
1 tbsp. water
1 tsp. vanilla extract
2 tbsp. butter

Combine dry ingredients and mix slightly. Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.

Heat a large skillet over medium-high heat until hot. While pan is heating, add butter. As soon as the butter is melted, add melted butter to pancake batter.

Return pan to stove and stir butter into batter.

When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.

Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.

Note: This recipe also works well with whole-wheat flour.

Variation: Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat!

Excellent, my craving for pancakes has been quenched thanks to this good recipe. Nice to be able to make pancakes even when we're all out of eggs. I was able to deviate from this recipe slightly to suit my own needs, but a great guide!

Omg! I'm always craving pancakes but either never have the batter or never have the eggs. I just tried this recipe. I didn't use the cinnamon and vanilla extract, however, I used banana extract instead, and it was simply delicious. I must have messed up somewhere along the lines, because it want fluffy, but at 3am, I could care less lol. Thank you so much for this addition to my life! :)

I woke up this morning wanting pancakes for breakfast, but to my surprise there were no eggs. I googled egg free pancakes and came up with quite a few options. This one looked the best so I gave it a go. They turned out better than I expected and my partner (who is usually pretty picky) said he liked these better than the ones I usually make. Looks like I'll have to swap it in my recipe book :) I didn't have any cinnamon, but I will put it on the next shopping list to give it a try. Thanks so much dawn )

Good recipe, needs more sugar, needs to be sweeter. Not bad for eggless!

I didn't even have veggie oil and they still came out perfect. I love them and make them every morning. What is the function of the veggie oil?

Perfect pancakes for my little boy. I would add some melted fresh apples on the side or as a filling. Go perfect with the cinnamon!
